INGREDIENTS:
Soak the black eye beans in water for at least 4 hrs. Chop all the vegetables into small pieces and keep them aside.
Now take a pressure cooker and add 1 tbsp oil, when the oil is hot enough add mustard seeds, cumin seeds and urid dal to it. When mustard seeds start spluttering add chopped onions and fry them for 2-3 mins.
Then add the soaked black eye beans, chopped potatoes, tomatoes, red chilli powder, salt and cook them by adding 1 cup of water for 5 to 6 whistles.
Then remove the cooker lid and check for salt and red chilli powder and add chopped cilantro and mix the curry well. Eat it with chapati or phulka.
